Flatten Chicken

To flatten a whole chicken, use a sharp knife or kitchen shears to cut down either side of the back bone. Remove the back bone.  Turn chicken breast side up and press firmly on the breastbone to flatten.

Dry rub:

  • 1/2 cup paprika
  • 1/2 cup brown sugar
  • 1 tbsp black pepper
  • 1 tbsp sea salt
  • 1 tbsp chili powder
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp cayenne (optional)


Season chicken with the dry rub, you can also use your favourite barbeque sauce in the last 10 minutes of cooking.  Place on a greased foil pan on the grill.  Cook on medium heat breast side up until a internal temperature of 185 degrees F has been reached, approximately 45 minutes to 1 hour 15 minutes, depending on size of bird. Tent with tin foil and allow to sit for 15 minutes before cutting.
