I just made a batch of this salsa last week, and we are currently on the last jar!
8 cups of tomatoes peeled and chopped (drain liquid for a chunky salsa)
2 1/2 cups of chopped sweet onions
1 1/2 cups of green peppers
1 cup jalapenos ( Wear gloves!!)
6 garlic cloves, minced
2 teaspoons cumin
2 tsp pepper
1/8 cup canning salt
1/3 cup sugar
1/3 cup vinegar
1 15 ounce can of tomato sauce
1 12 ounce can of tomato paste
3 tbsp of fresh cilantro added in the last five minutes of cooking, I used 1 1/2 tbsp and only added to half the batch.
Mix all ingredients together (except cilantro if you decide to use it), bring to a slow boil for 35 mins. Add to sterilized jars and cook in a hot water bath for ten minutes.
For a hotter salsa leave the seeds and rinds in the jalapenos, I left about 3/4 in mine and I would say mine turned out to be a nice medium heat.
